How to Manage Photo Albums on an iPhone
At first glance, it may seem as though there are few options when it comes to photo albums on an iPhone. By default, the pictures you take with your camera are saved to the Camera Roll, which may appear as the only folder in your "Pictures" interface. Using iTunes, you can sort your pictures into separate albums and sync them to your iPhone for a more organized Picture Roll and an easy way to sort your synced photos.

Connect your iPhone to your computer using the supplied USB cord. Launch iTunes and sync your iPhone once through, if necessary.
Open "My Computer" through the Start menu and locate your iPhone as a drive on your computer. Note that your computer may recognize your iPhone as a camera rather than a phone. Double click to open the device as a drive and navigate to your photo folder, which may open automatically. You should see all the photos stored on your iPhone as .jpg files.
Minimize both the drive folder and iTunes. Right click on any blank space on your desktop and select "New" and then "Folder." This will create a new folder on your desktop. Open the iPhone drive and drag the photos you'd like to organize into the new folder. You can create and name folders for "People," "Places," "iPhone Backgrounds," "Edited Photos" or any other categories you'd like to incorporate onto your iPhone Camera Roll. Drag and drop applicable photos into the new folders.
Maximize iTunes and select your device from the left-hand panel. This will open various tabs for the content on your iPhone. Choose the tab in the main window that says "Photos." Check the box that says "Sync Photos" and then change the drop down menu to "Choose Folder." Navigate to your Desktop and click one of the categorized Desktop photo files. Click "Apply" and the new folder and categorized pictures will be synced to your iPhone. Repeat the process for each Desktop folder you've created.
Disconnect your iPhone once all folders have been synced. Enter your Camera Roll and delete any picture that has been sorted into one of your new folders to save space on your iPhone memory. You can now view, share and delete photos from organized files within the Camera Roll.
