Restoring your most recent iPhone backup can recover any deleted notes. Your notes are restored to the Notes app whether you use iCloud or the iTunes program on your computer as a backup resource. Use your iPhone's Restore feature to access and restore an iCloud backup over a wireless network. If you use the desktop version of iTunes to back up your device, use the Restore From Backup feature to retrieve your deleted notes.

Use an iCloud Backup
Open the Settings app and select General to open General Settings screen.
Tap Reset at the bottom of the screen.
Choose Erase All Content and Settings from the list of options.
Enter the pass code you set to protect your iPhone. If you didn't set a pass code, the Enter Passcode screen does not appear.
Select Erase iPhone to initiate the Restore process and open the Setup Assistant.
Tap Slide to Set Up and then follow the instructions on each screen until you get to the Set Up iPhone screen.
Select Restore from iCloud Backup, select the iCloud backup you want to restore and then complete the Setup Assistant to restore the deleted notes.
Use an iTunes Backup
Access the iTunes backup stored on your computer through the iTunes program.
- Connect your iPhone to your computer and open the iTunes program.
- Press the Alt key, open the File menu and select Devices from the drop-down menu.
- Click Restore From Backup and then select the backup you want to use. Click the Restore button and wait for the backup to upload to your iPhone.
- Open the Notes app to view your restored notes.
